DrBBQ’s Jamaican Firewalk Turkey Thighs

I cooked these turkey thighs at DizzyFest 2021 and it was a big hit! The Naan bread was a great way to serve this at a fest, but feel free to improvise at home. If you can’t find boneless skinless turkey thighs, just pull the skin off and cut out the bone with a sharp knife.

Makes about 6 servings


Directions

  1. Prepare the grill to cook direct on a raised grid at about 350°F
  2. Spread the thighs in a butterfly fashion and slash any thick parts with a sharp knife so they will cook evenly
  3. Brush the thighs with a light coat of the oil
  4. Season liberally with Dizzy Pig Jamaican Firewalk Seasoning
  5. Place the thighs on the grill and cook, flipping occasionally, for 35-45 minutes. The thighs will be golden brown and cooked to an internal temp of about 185°F
  6. Transfer the thighs to a cutting board to rest
  7. Grill the Naan bread 2 to 3 minutes per side, flipping occasionally, until golden brown
  8. Cut the Naan bread into two bite sized pieces
  9. Slice the turkey and place a slice on each Naan bread portion
  10. Serve immediately as an appetizer
