DrBBQ’s Feta Bake ala Dizzy Pig

I may not be a Tik Tok star but I know how to make a Tik Tok famous recipe into a Dizzy Pig delight. This feta bake is simple, fun and really tasty. Use whatever kind of pasta you like, but just make sure you get the tomatoes fully cooked so they’ll burst.


Ingredients

Makes about 4 servings
Feta Bake

  • 1 4-oz block feta cheese
  • 2 pints grape tomatoes
  • 4 scallions, thinly sliced with a little of the greens reserved for garnish
  • 2 cloves garlic, crushed
  • 1/4 cup olive oil
  • Dizzy Pig Mediterranean-ish Italian & Greek seasoning
  • 1/2 pound corkscrew pasta, cooked and drained

Shrimp Skewers


Directions

  1. Prepare the grill to cook indirect at 400°F
  2. Place the feta cheese in the center of a disposable pan
  3. Spread the tomatoes evenly around the block of feta cheese
  4. Sprinkle the scallions and garlic over the tomatoes
  5. Drizzle olive oil over the whole pan
  6. Season the whole pan liberally with the Dizzy Pig Mediterranean-ish seasoning
  7. Place the pan in the grill for about 45 minutes, until the tomatoes are soft
  8. Meanwhile, skewer the shrimp and season them with Dizzy pig Ghost seasoning
  9. After 25 minutes, add them to the cooking grate
  10. When the tomatoes are soft, remove the pan from the grill
  11. Remove the shrimp from the grill and set aside
  12. With a large spoon, stir the feta and tomatoes until well blended.
  13. Add to the cooked pasta and blend until well incorporated
  14. Garnish with the reserved scallion tops, and serve with the shrimp skewers on the side
