This light and flavorful dinner is perfect for warm summer evenings!
INGREDIENTS
- 1-2 lb. Halibut Filet (or other firm-fleshed fish)
- Dizzy Pig Happy Nancy to coat
- Butter, ghee or oil for cooking
- 1/4-1/2 cup macadamia nuts
- 1/2 cup all-purpose flour
- Egg wash:
- 1 Egg
- 2 tbsp milk
- Shake of Happy Nancy
INSTRUCTIONS
- Cut fish into manageable pieces. Gather raw ingredients.
- Season fish with medium coat of Happy Nancy
- Dip in egg wash, then flour, then egg wash again.
- Grind up nuts in food processor, and press into fish.
- Cook in cast iron pan in butter or ghee.
- Flip when browned.
- Plate and Serve!
