Tomato, Leek and Spinach Frittata
DrBBQ’s Grilled Brisket Burgers with SPG Original

Brisket burgers are a real treat. If you don’t see it at your butcher, just ask them to grind some for you. Or if you have a grinder, simply save some brisket scraps and grind them yourself. I like a medium grind passed through twice. Dizzy Pig SPG Original is the perfect seasoning for this tasty cut of ground beef.

Ingredients
- 2 lb ground beef brisket
- 6 brioche buns
- Dizzy Pig SPG Original seasoning
- 6 large jalapeños, split in half and seeded
- 6 slices sharp cheddar
- 12 slices cooked bacon
- French Fried Onions (from the can)
Directions
- Prepare the grill to cook direct over medium-high heat, about 400°F
- Divide the ground brisket into six equal portions, form each into a patty, and press down in the middle with your thumb to ensure even cooking
- Season each patty generously with the Dizzy Pig SPG Original Seasoning
- Grill the cut sides of the buns until golden brown and set aside
- Grill the jalapeño halves until golden brown and set aside
- Add the burgers to the grill and cook, flipping occasionally, until they are well browned and cooked to an internal temp of 150°F
- Top each burger with two jalapeño halves and a slice of cheese
- Close the grill lid and cook just until the cheese is melted, and the burgers are cooked to 155°F
- Place two slices of bacon on the bun bottoms
- Top each with a brisket burger
- Top each burger with a handful of the crispy onions and then a burger top

Grill the cut sides of the buns until golden brown and set aside 
Grill the jalapeno halves until golden brown and set aside 
Add the burgers to the grill and cook until they are well browned and cooked to and internal temp of 150°F 
Top each burger with two jalapeno halves... 
and a slice of cheese. Close the grill lid and cook just until the cheese is melted, and the burgers are cooked to 155°F 
Place two slices of bacon on the bun bottoms 
Top each with a cooked burger and a handful of the crispy onions
