DrBBQ’s Sweet and Smokey Turkey Bites

Another DrBBQ classic, these turkey bites come together quickly with just a few ingredients. Perfect for an appetizer for munching on, or as part of a main meal. The turkey tenderloins are simply seasoned with Dizzy Dust, grilled for a smokey flavor, then cubed and finished with a sweet sauce.

You can kick up the heat level by using Spicy Dizzy Dust, and end up with turkey bites that are spicy, sweet and smoky. Another winning combination.

Sauce

  • 1 cup BBQ sauce of choice
  • 1/4 cup honey
  • 1/4 cup brown sugar

Directions

  1. Prepare the grill or smoker to cook indirect at 350°F with apple wood added for flavor
  2. With a sharp knife, split the turkey tenders in half lengthwise
  3. Season the strips liberally with the Dizzy Dust
  4. Put them on the grill and cook for 20 minutes to add smoke flavor. Note that the turkey will be underdone, but it’s going to cook more in the sauce
  5. Remove turkey tenders to a cutting board and cut them into bite-sized pieces
  6. Add them to a grill-friendly pan (a disposable foil pan works great for this recipe)
  7. In a medium bowl, combine the barbecue sauce, honey, and brown sugar and mix well
  8. Pour the sauce over the turkey bites and toss until they are all well coated
  9. Return pan to the grill/smoker and cook for 20-30 minutes until hot and bubbling
  10. Remove and serve immediately with traditional barbecue sides and some bread for sopping up that sauce
