Happy Nancy Macadamia Nut Encrusted Halibut

This light flavorful dinner is perfect for warm summer evenings. A dusting of Happy Nancy gives it a nice delicate flavor, the coating of macadamia nuts adds a nice crunch while keeping the fish tender and moist, and cooking it in a pan means dinner is ready in no time at all!

Ingredients

  • 1-2 lb. halibut fillet (or other firm-fleshed fish)
  • Dizzy Pig Happy Nancy to coat
  • Butter, ghee or oil for cooking
  • 1/4-1/2 cup macadamia nuts
  • 1/2 cup all-purpose flour

Egg wash:

Directions

  1. Cut fish into manageable pieces. Gather raw ingredients.
  2. Season fish with medium coat of Happy Nancy
  3. Dip in egg wash, then flour, then egg wash again.
  4. Grind up nuts in food processor, and press into fish.
  5. Cook in cast iron pan in butter or ghee.
  6. Flip when browned.
  7. Plate and Serve!
