DrBBQ’s Mediterannean-ish Buttered Roast

The great herb flavors of Dizzy Pig Mediterranean-ish are perfect for the crust on a Prime Rib Roast, particularly when mixed with butter which gives a great flavor and browns the roast beautifully.

Ingredients
- 6 lbs choice ribeye roast
- 1 lb butter, softened
- 2 Tbsp Mediterranean-ish Italian & Greek Seasoning
- 2 cloves garlic, sliced
- Salt
- Pepper
Directions
- Trim off the ends and excess fat around the ribeye roast
- In a medium bowl, mix butter, salt, pepper, and Mediterranean-ish with a spatula
- Make 5-7 small incisions around the meat and insert the sliced garlic into each pocket
- Scoop the butter mix out of the bowl and cover the entire roast
- Place the roast in the Big Green Egg on indirect heat at 325°F
- Cook the roast to an internal temperature of 120°F, approximately 90 minutes to 2 hours
- Let rest for at least 20 minutes before serving
Step by Step

Trim excess fat around the ribeye roast 
In a medium bowl, mix butter, salt, pepper, and Mediterranean-ish with a spatula 
Scoop the butter mix out of the bowl and cover the entire roast 
Cook the roast indirect at 325°F to an internal temperature of 120°F, approximately 90 minutes to 2 hours 
Let rest for at least 20 minutes before serving
