Fajita-ish Shrimp Bites
Macadamia Nut Crusted Halibut with Happy Nancy

This light flavorful dinner is perfect for warm summer evenings. A dusting of Happy Nancy gives it a nice delicate flavor, the coating of macadamia nuts adds a nice crunch while keeping the fish tender and moist, and cooking it in a pan means dinner is ready in no time at all!

Ingredients
- 1-2 lb. halibut fillet (or other firm-fleshed fish)
- Dizzy Pig Happy Nancy to coat
- Butter, ghee or oil for cooking
- 1/4-1/2 cup macadamia nuts
- 1/2 cup all-purpose flour
Egg wash:
- 1 egg
- 2 Tbsp milk
- Shake of Happy Nancy
Directions
- Cut fish into manageable pieces. Gather raw ingredients.
- Season fish with medium coat of Happy Nancy
- Dip in egg wash, then flour, then egg wash again.
- Grind up nuts in food processor, and press into fish.
- Cook in cast iron pan in butter or ghee.
- Flip when browned.
- Plate and Serve!
