Whether it’s served over a bowl of pasta or as a dip for French bread, Catherine’s pomodoro sauce is simple and perfect every time.
- 1/3 cup of olive oil
- 1 1/2 tsp Shakin’ the Tree
- 2 large onions, chopped
- Good sprinkle salt and fresh ground black pepper
- 4 large homegrown tomatoes, chopped
- 1 28-oz can of Crushed Tomatoes
- 1 6-oz can tomato paste
- Chunk of Parmesan cheese rind
- 2 Tbsp sugar
- Chop the tomatoes
- Heat olive oil until hot
- Add 1/2 teaspoon Shakin’ the Tree into the hot oil
- Add onions and sauté until translucent
- Add chopped tomatoes and cook until tender. Season with salt and fresh ground black pepper to taste
- Add crushed tomatoes and tomato paste
- Add 1 teaspoon of Shakin’ the Tree along with the sugar and stir
- Add the rind of parmesan cheese
- Simmer until sauce is thickened to your liking
***It’s very easy to add things to this simple chunky tomato sauce. Brown a pound of hamburger or sausage and stir in when adding the crushed tomatoes. Before serving, add in little neck clams and a can of escargot for a rustic French flavor. Serve over pasta or scoop it up with bread.
