DrBBQ’s Mediterannean-ish Buttered Roast

The great herb flavors of Dizzy Pig Mediterranean-ish are perfect for the crust on a Prime Rib Roast, particularly when mixed with butter which gives a great flavor and browns the roast beautifully.

  1. Trim off the ends and excess fat around the ribeye roast
  2. In a medium bowl, mix butter, salt, pepper, and Mediterranean-ish with a spatula
  3. Make 5-7 small incisions around the meat and insert the sliced garlic into each pocket
  4. Scoop the butter mix out of the bowl and cover the entire roast
  5. Place the roast in the Big Green Egg on indirect heat at 325°F
  6. Cook the roast to an internal temperature of 120°F, approximately 90 minutes to 2 hours
  7. Let rest for at least 20 minutes before serving
