Chuck Watson is a member of the Dizzy Pig family famous for his adventurous and one of a kind recipe ideas! His Corn and Green Chilies Casserole is a crowd pleaser for sure! Fresh corn brings a vibrant flavor to this dish while the chilies, jalapeños and Shakin’ the Tree add a pop of flavor perfect for summertime picnics or winter parties.

Ingredients
- 12 ears fresh sweet corn cut from cob (approximately 8-9 cups if using frozen corn)
- 1 can (4 ounces) chopped green chilies
- 4 oz pickled jalapeños (red preferred) chopped
- 2 cups shredded sharp cheddar cheese (reserve 1/8 cup) – (check labels to keep recipe gluten-free)
- 2 cups sour cream
- 4 eggs lightly beaten
- 4 Tbsp melted butter
- 1.5 tsp Dizzy Pig® Shakin’ the Tree
Directions
- Preheat Big Green Egg to 375°F with inverted plate setter, feet up. Or preheat oven to 375°F.
- Butter or Pam a disposable half sheet pan or casserole dish.
- Mix all ingredients and pour into pan.
- Sprinkle with reserved cheese and additional Shakin’ the Tree.
- Cook 35 – 40 minutes or until set.
- Enjoy!
Step by Step

Ingredients to make Chuck’s Corn and Green Chiles Casserole 
In a large mixing bowl, add corn, chiles, jalapeños and sharp cheddar cheese, reserving 1/8 cup of cheese for sprinkling on top 
Add Shakin’ the Tree seasoning, eggs, melted butter, sour cream and mix it all together 
Pour into greased half pan, spread into an even layer, and sprinkle the top with the reserved cheese and additional Shakin’ the Tree 
Cover and cook 35 to 40 minutes or until casserole is set
