Guinness Beer Braised Brisket

Max and Sydney Rosen found a great recipe for a Guinness braised brisket and then put a fantastic Dizzy Pig spin on it. This simplest of recipes, with only three ingredients, turns out a bold, delicious brisket, matching the flavors of our Game On! coffee infused rub, the bitterness of the Guinness Stout, and the great beefy flavor of brisket. It’s easy, it’s fast, and it may be one of the best briskets you have ever eaten!!

Ingredients
- One brisket, well trimmed
- 6 bottles of Guinness Stout, or enough to completely cover the meat
- Dizzy Pig Game On! seasoning to coat
Directions
- Trim brisket
- Apply heavy dusting of Dizzy Pig Game On! seasoning
- Sear the brisket direct over a hot fire for 5 minutes per side
- Take the brisket and slice it into 4-inch square cubes
- Layer the cubes tightly in a large dutch oven
- Cover the meat completely with Guinness Stout (go almost all the way to the top of the dutch oven, you will lose a lot of liquid to absorption and evaporation)
- Cover the dutch oven tightly, and place in an egg at 500°F indirect. Make sure you have a lot of lump in the egg because it will use it all up, or you can put the dutch oven in your kitchen oven at 500°F
- Cook for 4 to 5 hours, until the meat is shreddable
- Shred the meat and leave in the remaining liquid
- Serve on potato rolls with horseradish or bbq sauce
