Fajita-ish Shrimp Bites

These taco-flavored shrimp bites are the perfect appetizer for your next game day party! Simple to make with Fajita-ish giving it a ‘wow’ factor, these bites are so addictive that we can’t stop at just one!

 


Ingredients

Shrimp Bites

  • Medium-sized shrimp, peeled and deveined
  • Dizzy Pig Fajita-ish Mexican seasoning
  • Tortilla scoops
  • Fresh cilantro

Susan’s Sauce

  • 1 can Rotel, drained
  • 2 tsp Fajita-ish
  • 16 oz sour cream
  • 8 oz cream cheese, room temperature

Directions

  1. To make Susan’s sauce, combine all ingredients in the bowl of the food processor. Place mixture into a freezer bag and snip one corner of bag to dispense.
  2. Stabilize grill (we use our Big Green Egg) around 350°F. Place plate setter in with legs down.
  3. Put a large squirt of sauce in each tortilla scoop, one shrimp and sprinkle with Fajita-ish.
  4. Cook about 8-10 minutes until shrimp are done.
  5. Sprinkle with chopped cilantro.
