Chicken Parmesan-ish Recipe

Nothing spells comfort like a nice hot plate of chicken Parmesan loaded with cheesy goodness. Not a complicated dish to make, this version is loaded with great flavors that will fill your kitchen with amazing smells. Dizzy Pig Mediterranean-ish is all the seasonings you need, and the layered approach to seasoning this dish ensures some serious depth of flavor.


Ingredients

  • 8 boneless/skinless chicken thighs
  • 1 onion (chopped)
  • 4 cloves garlic, minced
  • 1 large can diced tomatoes
  • 1/2 cup of Merlot or other red wine
  • 1/2 lb fresh Mozzarella cheese
  • 1/2 cup Panko bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 5 Tbsp Dizzy Pig® Mediterranean-ish Italian seasoning, divided
  • 2 Tbsp butter or ghee for pan searing and coating oven pa

Directions

Preparation

  1. Preheat oven to 375°F and butter a 13″x9″ glass oven dish
  2. Trim fat and silver skin from chicken, then season chicken liberally with 3 Tbsp of Mediterranean-ish
  3. Heat butter/ghee in pan over medium high heat
  4. Pan sear chicken until browned well on both sides, preferably no more than 5 minutes per side. Chicken may not be completely cooked, but it will finish cooking in the oven. Remove browned chicken from pan and set aside

Make Sauce

  1. Lower heat to medium and saute onions for a few minutes until softened
  2. Add garlic and stir constantly for about a minute
  3. Deglaze pan with Merlot wine and stir until mostly evaporated
  4. Add diced tomatoes, season with 2 Tbsp Mediterranean-ish seasoning, lower heat and simmer for about 10 minutes

Finishing

  1. Cut up cooked chicken thighs to desired size. Optionally, leave whole
  2. Add half of sauce to buttered pan
  3. Layer in chicken, and pour remainder of sauce over chicken
  4. Cover with slices of Mozzarella cheese, and dust with a layer of Mediterranean-ish (or Italian seasoning)
  5. Bake in oven until chese is melted and beginning to brown, and sauce is bubbling, approximately 40 minutes
  6. While parmesan is baking, combine Panko with parmesan cheese in a separate bowl
  7. Sprinkle panko cheese mixture on top of parmesan, and return to oven to bake until browned, about 10-15 minutes
  8. Rest for 5-10 minutes then serve
