DrBBQ’s Charcoal Roasted Boneless Leg of Lamb with Mediterranean-ish Garlic Rub
Sweet Heat Stuffed Chicken Breast

Chicken breast can sometimes get a bad rep. If not done right, it can be a bit boring, bland, and dry. This recipe helps chicken breast reach its full potential!

Ingredients
Serves about 4
Chicken
- 4 boneless skinless chicken breasts
- 1 pack bacon (center cut)
- Dizzy Pig Crossroads BBQ seasoning
- Dizzy Pig Raging River
Filling
- 1/2 lb sweet Italian sausage
- 1/2 lb hot Italian sausage
- 1 jalapeño
- 1/2 onion
- 1/4 cup parmesan cheese
- 1 Tbsp garlic paste
- 8 oz cream cheese, room temperature
- 1-2 tsp Dizzy Pig Raging River, or to taste
Directions
- Preheat oven/grill/smoker to 350°F
Make Filling
- Cook the italian sausage until no longer pink
- Add onion, garlic paste and jalapeno, and cook until the veggies are tender
- In a mixing bowl, add cream cheese, sausage mixture, and parmesan cheese
- Season with 1-2 tsp Raging River (or to taste) and mix until well combined
Make Chicken
- Using a sharp knife, create a pocket in the side of the chicken breast for filling
- Stuff chicken breast adequately and season chicken breasts with a thin coating of Raging River
- Wrap each chicken breast with 4 pieces of bacon, using toothpicks to secure the bacon if needed
- Season the outside with Dizzy Pig Crossroads
- Place stuffed chicken breast in the smoker/oven and cook for 40-50 minutes, or until chicken reaches 165°F internal tempature
