Mediterranean-ish Stuffed Zucchini
Game On! Braised Beef Short Ribs with Coffee/Ginger Marinade

Shortly after nailing down the final formula for Game On!, Chris’ first test cook was short ribs. Hearty and rich, these braised beef short ribs have a depth of flavor that is enhanced with a simple marinade including coffee and ginger. The beef is browned on the grill, then braised in a pan for the remainder of the cook. Hope you enjoy!

Ingredients
- 4-5 lbs beef short ribs
Marinade
- 1 cup cold fresh brewed coffee
- 2 Tbsp balsamic vinegar
- 2 Tbsp oyster sauce
- 1 Tbsp grated fresh ginger
- Dizzy Pig Game On! Seasoning to coat
Directions
- Trim membranes and silver skin on meaty parts of the ribs
- Mix marinade ingredients together
- Place short ribs in plastic bag or other vessel
- Dump in marinade, and marinade for 2 hours to overnight
- Prepare cooker at 250°F if cooking direct, and 300°F if cooking indirect
- Drain marinade and reserve
- Season meat liberally with Game On! Seasoning
- Cook ribs, turning if necessary, for approximately 2 hours, or until a rich dark flavor crust has formed
- Place ribs in foil pan, add reserved marinade, cover with foil and return to cooker at 275-300°F indirect
- Cook for 1-2 hours until meat is very tender and approximately 195-200°F internal
- Rest until they have cooled slightly, and enjoy!
