Shakin' the Tree pomodoro sauce

Whether it’s served over a bowl of pasta or as a dip for French bread, Catherine’s pomodoro sauce is simple and perfect every time.

Ingredients

  • 1/3 cup of olive oil
  • 1 1/2 tsp Shakin’ the Tree
  • 2 large onions, chopped
  • Good sprinkle salt and fresh ground black pepper
  • 4 large homegrown tomatoes, chopped
  • 1 28-oz can of Crushed Tomatoes
  • 1 6-oz can tomato paste
  • Chunk of Parmesan cheese rind
  • 2 Tbsp sugar

Directions

  1. Chop the tomatoes
  2. Heat olive oil until hot
  3. Add 1/2 teaspoon Shakin’ the Tree into the hot oil
  4. Add onions and sauté until translucent
  5. Add chopped tomatoes and cook until tender. Season with salt and fresh ground black pepper to taste
  6. Add crushed tomatoes and tomato paste
  7. Add 1 teaspoon of Shakin’ the Tree along with the sugar and stir
  8. Add the rind of parmesan cheese
  9. Simmer until sauce is thickened to your liking

***It’s very easy to add things to this simple chunky tomato sauce. Brown a pound of hamburger or sausage and stir in when adding the crushed tomatoes. Before serving, add in little neck clams and a can of escargot for a rustic French flavor. Serve over pasta or scoop it up with bread.
