Often considered plain jane, chicken is one marvelous meat. A versatile classic, chicken provides the perfect canvas for flavor and cooking experimentation. Though its mix of white and dark meat presents a challenge. Our Chicken Class hones in on various cooking techniques for perfecting thick thighs and breasts as well as tasty drumsticks and wings.

From morning to mid-day, we’ll talk through the specific cooking needs of each chicken piece, including shopping and preparation. We’ll cover all the particulars: the right heat, smoke, temperature control, seasonings and rubs, and a buffet of cooking techniques for juicy, flavorful chicken. We’ll fill your head with a wealth of know-how and your heart with a new appreciation and pride for this maestro of flavors, chicken.
