Zucchini Crunch
3 medium zucchini
1 cup panko breadcrumbs
1 cup fresh grated good quality grated parmesan cheese
1-2 TBS Dizzy Pigs Raging River or Shakin the Tree rub
1 egg
Splash of milk
Preheat the oven to 450 degrees and watch them-- they cook fast.
Get a few fresh, bright green, medium sized zucchini. Wash them and slice into half rounds 1⁄2 inch thick.

You can see that three zucchini will make quite a few chips.

Mix the panko, parmesan cheese, and Raging River or Shakin the Tree rub together n a bowl, and toss to mix.

Mix the egg with a splash of milk in a bowl to make a fairly thick egg wash. Then, working with a few pieces of zucchini at a time, soak in the egg wash and dredge in the panko mixture.

The chunks will not be completely covered in the breading mixture. That’s ok.

Place on a greased cookie sheet as you go along. When all zucchini is coated and on the pan, put the pan into the hot oven and bake for about 15 minutes, until brown on the outside and cooked through. They will be very hot, however they cool very quickly, so eat them right away! The finished picture was a little blurry, but the taste was sharp and crisp!
