Nothing prettier than tender, pulled pork piled high on a pair of toasted buns. Those pulled pork dreams begin as a big hunk of meat, the pork butt. Cut from the pig’s upper shoulder, this slab of pork is exactly what a slab should be: thick and meaty. But be not intimidated by the prospect of slow cooking this chunk of pork into tender vittles. Our Pork Butt Class will guide you to becoming a master.

In about half a day, you’ll learn how to cook a perfectly tender pork butt, starting with how to pick a prime cut through to finishing. We’ll cover all the particulars: heat, smoke, temperature control, cooking by feel and more to arrive at the end goal, tender pork with just the right bark. From rubs, sauces and injections, you’ll master flavoring and finishing as well. Only mastery of eating will remain.
